Ingredients

  • VEGETABLE MIX:
  • 1 TIN NO ADDED SUGAR HEINZ BEANZ
  • 1 WHOLE COURGETTE (CHOPPED 2CM PIECES)
  • 1 WHOLE BELL PEPPER (CUT IN STRIPS)
  • HALF DICED RED ONION
  • 4 MEDIUM SIXED EGGS
  • 1 DICED MEDIUM TOMATO
  • SPICE MIX:
  • 1 TSP CORIANDER POWDER
  • 1 TSP CUMIN POWDER
  • 1/2 TEASPOON SMOKED PAPRIKA POWDER
  • BLACK PEPPER TO TASTE
  • 2 CLOVES CHOPPED GARLIC
  • JUICE AND ZEST OF ONE LIME
  • 50ML WATER
  • ONE HANDFUL CORIANDER
  • SAUCE:
  • 150ML LOW-FAT YOGHURT
  • OLIVE OIL TO TASTE
  • SALT AND BLACK PEPPER TO TASTE

Method

  1. Chop all the vegetables and sautee on medium to high heat all together in a pan. After 5-10min, add the dry spices and garlic and fry for approximately 30 seconds until fragrant
  2. Add the tin Heinz Beans and bring to a simmer. If needed add a bit of water to dilute the mixture
  3. When the desired consistency is reached make a hole in the sauce and crack 4 eggs in the pan. Cook the eggs for 6 minutes
  4. Finish the dish with freshly chopped coriander and enjoy all together with the yoghurt sauce and some flatbread.
