Ingredients
- 2 TBSP Vegetable Oil
- 1 Onion (Finely sliced)
- 1 Clove Garlic (Crushed)
- 1 Carrot (Sliced into thin rounds)
- 2 TSP Garam Masala
- 1 TSP Mild Curry Powder
- 2 Small Small Sweet Potatoes (Peeled and chopped into 1cm cubes)
- 415 g Tin of Heinz Beanz
- 120 g Frozen Peas
- 400 g Tin of Chopped Tomatoes
- 300 g Basmati Rice
- Small bunch of Coriander (optional)
- Sliced Chillies (optional)
Instructions
1.
Add oil to a large saucepan on a low-medium heat – once hot, add onions and sauté for 2-3 minutes then add garlic and stir for 1 minute.

Add carrots and sweet potato and stir, then add spices, season with salt and pepper, and combine again.

Add tinned tomatoes and simmer on a medium heat for 10 minutes.

In a separate saucepan, cook the rice according to the packet instructions.
5.
Once the 10 minutes it up, add Heinz Beanz and frozen peas, stir again and simmer for a further 8-10 minutes.
6.
Serve in bowls with the naan bread on the side – or serve with rice instead if you prefer. Sprinkle with fresh coriander and sliced chillies if you like.
